- Ingredients
- 4 cups fresh Tomatoes (chopped)
- 1 onion (finely chopped)
- 4 whole cloves
- 2 cups Chicken broth
- 2 Tbsps butter
- 2 Tbsps flour
- salt (to taste)
- 2 tsps granulated sugar
- 1 cup white rice (cooked)
- 1 bunch Basil
- 3 Tbsps Sour cream
Preparation steps
1.
In a saucepan, over medium heat, combine tomatoes, onion, cloves and chicken broth. Bring to a boil, reduce heat and gently simmer for about 20 minutes. Remove from heat. Puree soup in batches using either a food processor or blender. Strain the mixture through a food mill or mesh sieve placed over a large bowl.
2.
In the empty saucepan, melt butter over medium heat. Stir in the flour to make a roux, cooking until the roux is golden brown. Gradually add the tomato mixture, whisking to remove any lumps. Season with salt and sugar. Heat thorough.
3.
Ladle into serving bowls. Add a scoop prepared hot rice to the middle of the bowl. Garnish with basil leaves and sour cream. Serve.
