Preparation steps

Rinse the rice. Cook in a pot with two parts water to rice, season with salt, and bring to a boil. Cover, reduce heat to very low, and simmer for about 20 minutes.

Sweat the chopped shallot in a pan with olive oil until translucent. Mix in the pressed garlic, bay leaf, and chopped tomatoes. Season with salt and pepper. Simmer for about 15 minutes, stir in the rice, and simmer for another few minutes. Serve garnished with the Parmesan.
