Tomato and Passion Fruit Salad with Shrimp
Halve passion fruit and remove seeds, spoon out pulp and chop finely. Rinse and halve chile pepper, remove seeds and ribs and chop finely. Squeeze lime juice. Combine passion fruit with chile pepper, lime juice, 4 tablespoons of olive oil and season with salt and sugar. Rinse and chop tomatoes. Rinse cilantro, shake dry and chop finely. Mix tomato and cilantro with passion fruit vinaigrette. Rinse and pat dry shrimp. Heat remaining oil in a pan and saute shrimp for a few minutes, season with salt and cayenne pepper. Arrange salad on plates and sprinkle with coconut shavings. Top with shrimp and serve.
