- 2 ¼ cups all-purpose flour
- ⅔ cup water
- 12 ozs extra firm Silken tofu
- 6 ozs vegan Dark chocolate (70% cocoa solids, chopped)
- 1 ¾ cups sugar
- ¼ tsp salt
- 2 tsps vanilla extract
- ½ cup sunflower oil
- ¾ cup cocoa powder
- ½ cup chopped Walnut
Preparation steps
1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Grease an 18 x 28 cm|7" x 11" baking tin and line the base with non-stick baking paper.

Puree the tofu, 75g|2 1/2 oz flour and water in a blender or food processor until smooth. Pour into a pan and whisk constantly over a low heat until thickened. Do not boil.

Remove from the heat and stir in the chocolate, salt, vanilla and sugar until the chocolate has melted. Set aside to cool for 30 minutes.

Stir in the oil until smooth, then stir in the cocoa, remaining flour and walnuts until blended.
5.
Put into the tin and spread evenly. Bake for 35-40 minutes until cooked, but the centre is still a little soft to the touch. Cool in the tin.
6.
Cut into bars to serve.
