For the brownies
6 egg whites
175 grams sugar
1 tablespoon Vanilla sugar
6 egg yolks
75 grams Pastry flour
50 grams cornstarch
30 grams cocoa powder
For the icing
1 packet Chocolate pudding (for 500 ml)
400 milliliters milk
3 tablespoons sugar
1 tablespoon powdered sugar (for dusting)
250 grams soft butter
For decoration
100 grams Chocolate shaving
75 grams blanched Walnut
2 tablespoons blue Sugar pearls

Preparation steps


Preheat the oven to 180°C (approximately 350°F).


For the brownies, beat egg whites until stiff, then gradually sprinkle with sugar and vanilla sugar and mix. Add egg yolks. Mix flour, cornstarch and cocoa in a bowl, sift, sprinkle over egg mixture and fold in gently. Pour batter into the baking sheet, smooth surface and bake in the preheated oven for about 35 minutes (test doneness with toothpick). Remove from the oven and allow to cool in the pan. Meanwhile, for the icing, mix pudding powder in a bowl with 3 tablespoons milk until smooth. Bring remaining milk and sugar to a boil in a pot, add milk pudding mixture and stir. Pour pudding into a bowl, sprinkle with powdered sugar, stir and leave to cool. Meanwhile remove brownies from the pan, cut brownies in half horizontally, place bottom half of brownies on a cake plate and fix it with a cake ring. Beat butter until creamy and stir into pudding mixture. Spread some of pudding mixture on the bottom half of brownies, place top half of brownies on top and then cover with pudding mixture. Serve brownies garnished with grated chocolate, walnut halves and sugar pearls. Refrigerate for at least 1 hour. Serve chilled.
