14 ozs Dark chocolate (at least 70 % cocoa content)
6 Tbsps Raw cane sugar
8 Tbsps apple pulp or apple sauce
3 Tbsps strong brewed Espresso
1 tsp vanilla extract
3 eggs
6 ozs Spelt flour
2 Tbsps Almond flour
4 tsps cocoa powder
1 pinch coarse Sea salt
4 ozs Walnut

1 Baking dish (20 x 28 cm)

Preparation steps

1.

Melt butter and 10 ounces dark chocolate in a pot over a bain-marie and let it cool down a little

Fold the whole cane sugar, apple pulp, espresso, and vanilla into the chocolate mixture. Beat the eggs one by one and also fold into the mixture.

Mix spelt flour, almond flour, cocoa powder and 1 pinch of salt.

Coarsely chop the walnuts and set aside about 2.5 tablespoons. Chop the rest of the chocolate as well.

Stir the remaining walnuts, chopped chocolate, and flour mixture into the chocolate mixture. Pour the mixture into a baking pan lined with parchment paper or foil and smooth it down. Sprinkle the set-aside nuts on top and bake in a preheated oven at 350°F for approx. 40 minutes. Allow to cool well, cut into 20 pieces, and serve.
