1 cup Brown rice
1.333 cups Tofu (cubed)
3 Tbsps sesame oil
3 Tbsps soy sauce
2 stalks Celery (chopped)
1 red pepper (deseeded and sliced)
1 Zucchini (chopped)
1 ¼ cups Broccoli
1 cup peas (frozen)
2 Tbsps Oyster sauce

Preparation steps

1.
Cook the brown rice according to the packet instructions.
2.
Mix the tofu with 1 tbsp sesame oil and 1 tbsp soy sauce and set aside.
3.
Heat the remaining oil in a wok until smoking then add the celery and pepper. Stir fry for 2 minutes then add the courgette, broccoli, peas and tofu.
4.
Cook until the vegetables are tender then add the remaining soy sauce and the oyster sauce. Stir well to coat and serve immediately.
