- 4 cups Tofu (cut into bite sized pieces)
- 2 cups vegetable oil
- 2 Tbsps sesame oil
- ¾ inch fresh ginger (grated)
- 5 cups fresh Spinach
- ⅞ cup vegetable stock
- 2 Tbsps Oyster sauce
- dark soy sauce (to taste)
- 1 tsp Corn starch (mixed with a few tbsp cold water)
- 2 cups Bamboo shoots (from a jar, drained)

Preparation steps
1.
Fry the tofu in hot oil until golden yellow and then remove from the pan using a slotted spoon. Set aside.
2.
Heat sesame oil in a wok and fry the ginger. Add the spinach and allow to wilt. Stir in the vegetable stock and the oyster sauce. Season with soy sauce and ground black pepper. Bring to the boil and stir in the cornflour.
3.
Stir in the tofu and the bamboo shoots, heat through and season to taste. Serve in preheated bowls.
