- 1 kilogram new potatoes
- salt
- 200 grams Yogurt (0.1% fat)
- 2 Tbsps Crème fraiche
- 1 Tbsp sharp Mustard
- 2 Tbsps freshly chopped Tarragon
- lemon juice
- 4 Tbsps vegetable oil
- 4 Tilapia (ready to cook, skinless) (about 200 grams)
- white peppers
- 2 Tbsps Pastry flour

Preparation steps
1.
Rinse the potatoes and boil in salted water for about 25 minutes, until done.

Stir together the yoghurt, crème fraîche, mustard, and tarragon. Season with lemon juice and salt.
3.
Drain the potatoes and let cool slightly. Then, sauté in a pan with 2 tablespoons of oil until golden brown.
4.
Rinse the fish fillets, pat dry, season with salt and pepper and coat with flour. Heat the remaining oil in a pan and sauté the fish until golden brown on each side, about 2 minutes. Served with the potatoes and the sauce on the side.
