- 4 Plaice (small, without head or tail)
- 200 grams Pastry flour
- 500 grams potatoes (waxy, such as red potatoes)
- salt
- peppers (freshly ground)
- 1 butter
- 1 handful Tarragon (or 1 handful of wild garlic, washed and spun dry)

Preparation steps
1.
Peel and quarter the potatoes, cook in boiling salted water. Remove from heat, drain and mix with 1 tablespoon butter.

Season the fish with salt and pepper and coat with flour. Heat 1 tablespoon butter in a pan and cook the fish about 2 minutes on each side. Froth the remaining butter in a small saucepan and add tarragon, tossing lightly to coat. Arrange the potatoes, each with a piece of fish, onto serving plates. Sprinkle with the tarragon. Serve immediately.
