Preparation steps

Rinse the wild garlic leaves and pat dry.

Mix the cornmeal with the flour, the baking powder, the ground curry, the olive oil and the salt. Pour in 300 ml of cold water (approximately 1 1/4 cups) and stir until a thick liquid batter is formed.

Coat the wild garlic leaves in the batter and fry for about 1 minute in some oil at 170ºC (approximately 350ºF) until golden brown. Drain on paper towels.

Serve with a plum sauce if desired.
