1 Tbsp sunflower oil
1 clove garlic cloves (chopped)
cup Fish broth
2 Tbsps Fish sauce
2 Tbsps soy sauce
1 tsp Corn starch
2 cups Mung bean sprouts (fresh or preserved, rinsed and drained)
5.333 cups white fish fillets (chopped into 3 cm/1 1/4 " strips)
6 scallions (roughly chopped)
cayenne pepper

Preparation steps

1.
Heat the oil in a pan and soften the garlic.
2.
Add the fish broth, fish sauce and soy sauce.
3.
Mix the cornstarch to a paste with a little water and stir into the sauce. Bring to a boil and allow to thicken slightly.
4.
Add the bean sprouts, fish and half of the scallions, cover and simmer for 4-5 minutes.
5.
Season with salt and cayenne pepper and serve scattered with the remaining scallions.
