Peanut oil (to fry and deep fry)
8 ½ cups Green beans rinsed and trimmed (long beans halved)
2 cloves garlic cloves (peeled and finely chopped)
2 chili peppers (rinsed, halved, deseeded and finely chopped)
2 scallions (rinsed, cleaned and finely chopped)
1 tsp freshly grated ginger
½ cup canned Kidney beans (rinsed and drained)
2 Tbsps Rice wine
2 Tbsps Fish sauce
soy sauce

Preparation steps

1.
Deep fry the green beans in portions in hot groundnut oil until they begin to wrinkle. Remove from the fat and drain well.
2.
Soften the garlic, chile, spring onions, and ginger root in 1 tbsp of hot oil.
3.
Add the kidney beans, 2-3 tbsp water, the rice wine and fish sauce and simmer for 1-2 minutes.
4.
Finally, add the green beans and season with soy sauce.
