1 ripe Avocado (flesh squashed with a fork)
2 Tbsps lemon juice
cup fresh Mayonnaise
2 garlic cloves (crushed)
2 Tbsps parsley (finely chopped)
1 ⅔ cups Sweet potato (peeled and thinly sliced)
vegetable oil (for frying)

Preparation steps

1.
Mix the avocado with the lemon juice.
2.
Mix together the mayonnaise, avocado, garlic and parsley. Season with salt and pepper and chill until required.
3.
Heat sufficient oil in a pan to 160°C and fry the potatoes slices until golden brown and crispy. Remove using a slotted spoon and pat dry with kitchen paper. Serve with the dip.
