600 grams waxy potatoes
2 onions

2 sprigs rosemary
2 sprigs thyme
For the aioli
5 large garlic cloves
3 egg yolks
1 tsp spicy Mustard

½ Tbsp lemon juice

Preparation steps

Peel, rinse and cut potatoes into slices. Peel onions and cut into rings. Preheat oven to 220°C (approximately 425°F). Place potatoes on a baking sheet lined with parchment paper. Sprinkle with sea salt, cover with onion rings and herbs and drizzle with olive oil.

Bake potatoes in preheated oven until golden-brown, 35-40 minutes. For the aioli: Peel garlic cloves and press through a garlic press into a large bowl. Whisk in egg yolks, mustard, a pinch of salt and pepper. Whisk until mixture is light and creamy.

To begin with, add oil drop by drop, whisking constantly, until incorporated. Whisk in the rest of the oil in a thin stream, whisking constantly, until emulsified. Season with salt and lemon juice. Serve aioli with baked potatoes.
