- 28 ozs Sweet potato
- Sea salt
- vegetable oil (for frying)
- 5 ozs Crème fraiche
- 4 ozs Yogurt (0.1% fat)
- 2 Tbsps finely chopped Fresh herbs (such as Chervil, parsley, thyme)
- 1 garlic clove
- 1 tsp lemon juice

Preparation steps
1.
Peel and rinse the sweet potatoes. Cut into thick, finger length pins. Blanch for 2-3 minutes in boiling salted water. Remove from the water, rinse well, and dry thoroughly.

Heat the oil in a deep fryer or a large pot (the oil is hot enough that when you insert a wooden spoon, bubbles start to form). Fry the potatoes, in batches, for 4 minutes until golden brown. Drain on paper towels and season with salt.

For the sauce, mix the crème fraîche with the yogurt. Mix in the herbs, a crushed clove of garlic, and the lemon juice. Stir until combined.
4.
Serve the fries with the sauce.
