- ⅛ cup Rum
- 2 egg yolks

- ⅞ cup cream (at least 30% fat content)

Melt the chocolate in a bowl set over a pan of hot, not boiling, water. Stir in the rum and let cool slightly.

Beat the egg yolks and egg in another bowl over a pan of hot, not boiling water until creamy. Slowly pour in the chocolate, stirring all the time. Remove from the heat and stir until cold.

Whip the cream until it forms stiff peaks. Fold into the chocolate mixture.

Spoon the chocolate cream into cups and chill in the fridge for at least 1 hour.
