Preparation steps
1.
Preheat oven to 300º F. Grease a 1 1/2 quart baking or casserole dish with 1 tablespoon butter. Set aside.

Heat 3 cups of milk and the remaining butter in a saucepan until it comes to a boil. Add the cornmeal and reduce heat to low. Stir for about 5 minutes or until the mixture thickens.
3.
Remove from heat; add maple syrup, molasses, salt, cinnamon, ginger. nutmeg, cranberries and egg. Whisk to combine. Pour mixture into prepared baking dish.
4.
Bake for 30 minutes.

Pour the cold milk over the pudding and return to oven. Continue baking for 1 1/2 to 1 3/4 hours or until the top is brown.
6.
Serve warm with a scoop of vanilla ice cream or whipped cream.
