1 Lime
150 grams Yogurt (0.1% fat)
1 Tbsp honey
1 Vanilla bean (scraped)
Lemon balm

Preparation steps

1.

Chop almonds in the food processor until fine. Add dates and process until consistency becomes marzipan-like.

2.

 Roll almond and date mixture into approximately 0.5 cm (approximately 0.2 inch) thick roll and cut into 12 pieces, small enough to fit inside strawberries.

3.

Rinse and dry strawberries, hull and scoop out strawberry pulp (set it aside) carefully. Stuff with almond and date filling, refrigerate. 

4.

Rinse lime in hot water, dry and peel thin strips. Squeeze out juice.

5.

Prepare yogurt sauce by combining honey, lime juice, vanilla and strawberry pulp puree.

6.

Spread yogurt mixture on dessert plates, arrange stuffed strawberries on top and serve garnished with lemon balm leaves and lime peel strips.
