2 Limes

2 egg whites
200 grams Yogurt (0.1% fat)
1 Tbsp powdered sugar

400 grams Strawberries
2 sprigs Lemon balm
½ Lime

Preparation steps

1.

Soak gelatine in cold water. Rinse limes in hot water, grate lime peel and squeeze out juice.

2.

Combine lime zest, 2 tablespoons of juice and sugar. Heat through in a pot, but do not boil. Add gelatine and stir until dissoloved. 

3.

Beat egg whites until stiff, gradually add hot lime mixture and fold in yogurt. Pour cream into a serving bowl, smooth out and refrigerate, covered, for 3 hours.

4.

Rinse and dry strawberries, hull and cut lengthwise into thin slices. Arrange strawberry slices on dessert plates. Combine remaining lime juice with powdered sugar and drizzle over strawberries.

5.

Dip tablespoon into hot water, scoop out yogurt mousse and arrange on strawberries.

6.

Serve garnished with lemon and halved lime wedges.
