Preparation steps
Wash and clean fennel, cut in half, remove stalk. Cut fennel into cubes; set fennel greens aside. Finely chop pistachios.
Peel orange so that all white is removed. Cut out the fruit fillets between the membranes, reserving the juice. Cut the fruit fillets in half and mix with the fennel cubes.
Whisk orange and lemon juice with olive oil and honey and season with salt and pepper. Mix the dressing into the fennel.
Wash the radicchio leaves, spin dry and place a little of the prepared filling in the center of each, roll up and pin with a toothpick or small skewer, and sprinkle with the fennel greens. Place on platter or chill until ready to serve.
