400 grams Strawberries
175 grams Rhubarb
1 generous pinch grated Lemon peel
2 Tbsps lemon juice
¼ l water
4 Tbsps sugar
1 Tbsp cornstarch
Vanilla ice cream (to taste)

Preparation steps

Rinse strawberries, pat dry and cut in half. Peel rhubarb and cut into 1-2 cm (approximately 1/4-3/4 inch) pieces. Mix rhubarb and strawberries with lemon juice, lemon zest, sugar and water in a small saucepan, bring to a boil and simmer for 5 minutes on low heat.

Mix the cornstarch with a little cold water and pour into the pot, stir and let simmer again for 2 minutes. Fill jelly into bowl and let cool for about 2 hours in the refrigerator. Serve the jelly with one scoop of ice cream.
