½ Pineapple (300 grams)
2 centimeters fresh ginger
4 Tbsps sesame oil
200 milliliters Pineapple juice
1 tsp fresh green peppercorns (optional)
1 tsp honey
1 splash lemon juice
salt
4 Steak (each about 180 grams, from the hip)

Preparation steps

Peel the pineapple, cut the stalk out and cut the flesh into small pieces. Peel the ginger and finely grate. Fry both in 2 tablespoons sesame oil over low heat and pour in a little water. Simmer until the pineapple pieces are soft, about 10 minutes, then mash finely. Add peppercorns and continue to simmer 5 minutes. Season to taste with honey, lemon juice and salt. Remove the sauce from the heat.

Preheat the oven to 100°C (approximately 212°F).

Rinse steaks and pat dry. Season with salt and pepper. Heat the remaining oil and fry the steaks in it on both sides briefly. Transfer steaks to a rack in the oven (with a drip pan underneath) and leave in oven until done, about 10 minutes.

Serve steaks with pineapple-ginger sauce.
