2 large carrots (peeled and diced)
1 Leek (washed and sliced)
2 red peppers (deseeded and diced)
¼ cup Rice vinegar
2 Tbsps caster sugar

3 Tbsps raisins
1 lemon (juiced)
1 cilantro (finely chopped)

Suggested variation; add 150 g / 5 oz / 2 cups sliced shiitake mushrooms to the slow cooker and 1 tsp Tabasco sauce to the slow cooker before cooking.

Preparation steps

1.
Coat the rump steak in the oil and season generously.
2.
Heat a large frying pan over a moderate heat until hot. Seal the beef in batches for 30 seconds, tossing and stirring before moving to a slow cooker.
3.
Add the carrots, leek, red pepper, vinegar, sugar, stock, raisins, lemon juice and beef stock to the slow cooker. Cover with a lid and cook on a medium setting for 4 hours.
4.
Adjust the seasoning to taste before stirring through the coriander.
5.
Spoon into big serving bowls before serving.
