Preparation steps

1.

Wrap the beef in plastic wrap, then in aluminum foil. Place in the freezer for 30 minutes.

2.

Preheat the broiler. Rinse, trim and julienne the pepper. Clean and thinly slice the mushrooms. Peel the onion, cut into quarters, and thinly slice.

3.

Remove the beef from the freezer and thinly slice. Cut the baguette into four pieces, then half each lengthwise. Toast the baguettes in the oven until crisp.

4.

Heat 1 tablespoon of oil in a pan. Sauté the onions and peppers for 2 minutes. Remove the vegetables from the pan and set aside. Sauté the beef in the remaining oil for 1-2 minutes. Add the onions, peppers, and mushrooms, and mix until combined. If using the spray cheese, add to the pan and mix until well combined (if using the sliced cheese, place over the top and let melt). Season to taste with salt and pepper, and divide onto the baguettes. Serve with ketchup, mayonnaise, or mustard if you'd like.
