Ingredients

For the dough
½ cube Yeast
1 pinch sugar
150 grams Pastry flour
50 grams Semolina flour
4 Tbsps olive oil
80 milliliters lukewarm milk
1 tsp salt
For the topping
150 milliliters crushed, canned Tomatoes
salt
freshly ground Black pepper
1 tsp dried thyme
125 grams Mozzarella
80 grams Emmentaler cheese
200 grams fresh Porcini mushroom
1 onion
1 garlic clove
freshly grated thyme
2 Tbsps olive oil

Preparation steps

For the dough, combine the yeast, lukewarm milk and sugar until smooth. Put the flour with the oil and salt in a mixing bowl, add the dissolved yeast. Knead to a smooth dough. Cover and let rise in a warm place for 45 minutes.

Divide the dough into 2 portions, roll out on a floured work surface around and place on two greased pizza pans.

For the topping, spread the tomatoes on the pizza crusts. Season with salt, pepper and thyme. Cut mozzarella into small cubes. Sprinkle both cheeses on the tomato sauce. Drizzle with olive oil.

Clean the mushrooms and cut into thin slices. Peel the onions, halve and cut into thin rings. Rinse the thyme, shake dry and pluck the leaves. Sprinkle everything evenly over the pizza. Bake in an oven preheated to 200°C (approximately 400°F) for about 20 minutes.
