2 Red onions
1 Spinach
200 milliliters Orange juice
4 Tbsps olive oil
2 Tbsps sugar
2 tsps dried Red pepper flakes
70 grams almonds (toasted, golden yellow)
Coriander (for garnishing)

Preparation steps

1.

Peel all citrus thoroughly with a sharp knife, removing as much pith as possible. Cut fruit into slices. Spread citrus in flat salad bowls decoratively. Peel onions and cut into very thin rings, spread on top of fruit. Rinse and spin dry spinach, arrange in salad bowls.

2.

Whish orange juice with oil, season with sugar and salt and pour over salad. Season with pepper flakes and sprinkle with almonds, let stand for about 15 minutes. Garnish with cilantro and serve.
