- ⅓ cup lemon juice (about 2 lemons)
- ⅔ cup fresh Orange juice
- 2 Tbsps shallots (minced)
- 1 ½ cups extra virgin olive oil
- 1 tsp lemon zest
- 1 tsp Orange zest
- 1 Tbsp honey
- 1 tsp Sea salt (or table salt)
- ¼ tsp freshly ground Black pepper
- 2 ½ cups bagged Baby spinach
- 32 ozs Salmon fillet (cut into 6 pieces)

- ½ tsp additional salt
- ¼ tsp additional freshly ground Black pepper

Preparation steps
1.
Pour the juices into a bowl, and add the minced shallots. Slowly whisk in 1 1/2 cups olive oil to form a smooth emulsion. Add the citrus zest and honey, and season with the salt and pepper.

Preheat a skillet or grill over medium-high heat and coat or rub grill with cooking spray.
3.
While the skillet/grill is heating, divide spinach leaves between 6 serving plates, drizzle 1/4 cup of the citrus mixture over the spinach and plate, and set aside.

Lightly coat the salmon on both sides with the citrus mixture; season with salt and pepper. Place in the skillet or in a grill basket if grilling and cook, turning once, until golden brown on both sides and medium-rare in the center, about 8 minutes, basting occasionally with the citrus mixture.
5.
Remove salmon fillets from the pan, and immediately place on top of spinach. Serve at once.
