- 1 green pepper
- 1 Tbsp olive oil
- 16 ozs all-butter Puff pastry
- 2 Tbsps butter (melted)
- 1 red chili pepper (deseeded and sliced)
- 1 cup Gruyere (grated)
- 8 slices Smoked ham
- parsley (to garnish)

Preparation steps
1.
Preheat the oven to 200ºC (180º fan) 400ºF, gas mark 6.
2.
Rub the red and green peppers with the olive oil, place on a baking tray and roast the oven for 10 minutes.
3.
Meanwhile, roll out the pastry on a floured board and brush with the melted butter. Scatter over the red chilli and gruyere and cut into 8 pieces. Transfer them to a greased backing tray and bake in the oven for 12 - 15 minutes or until golden-brown.
4.
Cut the peppers in half, remove the seeds and cut into slices. Arrange the ham and pepper slices on top of the tarts and garnish with parsley.
