This light dish, which can be an appetizer or meal, is a combination of so many beautiful flavors and health benefits. The tiny bites a packed with nutrients, and they are low in calories, making them a tasty snack to endulge, in guilt free!

You can leave out the cream cheese if you don't eat dairy or if you want it to be lower in calories.

1 Cucumber
2 tablespoons Pine nuts
2 tablespoons Chili sauce
1 teaspoon cream cheese
7 ounces cooked Sushi rice
1 Mandarin orange
2 teaspoons red Caviar (lumpfish)

Preparation steps

1.

Peel cucumber, cut off ends, cut cucumber crosswise and hollow out both pieces using a spoon or melon baller. Dry inside and outside of cucumber well with paper towel.

Toast pine nuts in a dry frying pan and let cool. Mix chili sauce with cream cheese and use to fill hollow centers of both cucumber pieces. Fill cucumber pieces with sushi rice from both sides and press firmly.

3.

Cut each cucumber piece into 6 slices and arrange on plate. Fillet mandarin oranges. Place 1-2 mandarin fillets on each piece of cucumber sushi and garnish with pine nuts and caviar.
