7 ozs cooked Sushi rice
1 tsp Wasabi

Preparation steps

Peel cucumber, cut in half lengthwise, remove seeds and cut into fine sticks.

Cut nori sheet in half and lay 1 half across the work surface (or on a bamboo sushi mat wrapped in plastic wrap). Spread half of sushi rice on nori sheet, leaving approximately 1 cm (approximately 1/2 inch) wide border at the top. Brush a thin strip of wasabi on the center of rice. Place half of cucumber sticks on wasabi. Sprinkle nori border with a little water. Roll nori from lower side over filling and roll it into a log. Gently press edges. Repeat with second nori sheet and remaining ingredients and cut both rolls into 6 equal pieces.

Serve if desired with pickled ginger.
