Preparation steps
1.
Peel cucumber, cut in half lengthwise, remove seeds and cut into fine sticks.
2.
Cut nori sheet in half and lay 1 half across a sushi bamboo mat wrapped in plastic wrap. Spread half of sushi rice on nori sheet with well-moistened hands, leaving approximately a 1 cm (approximately 1/2 inch) wide edge at the top. Spread a thin strip of wasabi on the center of the rice with a finger. Arrange half of cucumber pins on the wasabi. Sprinkle with 1 teaspoon sesame seeds. Sprinkle free edge of nori with a little water and roll around cucumber filling. Gently press edge. Repeat process with remaining ingredients. Cut both rolls into 6 equal pieces and serve.
