¾ cup Cucumber (peeled and diced apart from a strip for the garnish)
1 tsp Wasabi paste
Sea salt
¼ cup ice-cold milk
½ tsp fresh Dill

Preparation steps

Cut a piece of cucumber measuring about 1 x 2 inches (3x6 cm) and 1/2 inch (1 cm) thick. Slice thinly lengthwise for about two thirds of its length and thread on a wooden cocktail stick. Fan out the slices and reserve for the garnish. Peel and dice the rest of the cucumber and puree finely with the dill and a little salt. Then drain the cucumber through a sieve lined with a cloth. Blend the cucumber juice with the wasabi, pepper and milk and season to taste with salt. Pour into a glass and serve garnished with the cucumber garnish.
