100 grams Pastry flour
50 grams cornstarch
1 tsp Baking powder
1 Tbsp yellow Curry paste (available at Asian markets)
100 milliliters milk
4 Apple (such as Granny Smith)
2 onions
200 grams Halloumi cheese
salt
freshly ground peppers
4 Tbsps vegetable oil
2 scallions

Preparation steps

In a bowl, whisk flour with cornstarch, baking powder, curry paste and milk. Rinse apples. Cut two of the apples into quarters, remove cores, finely chop and mix into mixture. Peel, halve and thinly slice onions. Finely dice cheese. Fold onions and cheese into mixture and season with salt and pepper. Heat oil in a nonstick pan. Add a tablespoon of mixture, flatten slightly and fry until brown and crispy, 1-2 minutes per side.

Repeat with remaining mixture until used up. Keep cooked patties warm. Rinse, trim and thinly slice scallions crosswise. Cut remaining apple into thin slices. Alternately layer apple slices with fried patties in stacks. Garnish with scallions and serve with a spicy chutney or barbecue sauce, if desired.
