- 4 cups Minced Beef
- 1 piece fresh ginger (approx 2 cm)
- 1 scallion
- 1 clove garlic
- 2 eggs
- 6 tablespoons breadcrumbs
- ½ teaspoon Chili powder
- ½ teaspoon Cumin
- ½ teaspoon ground cilantro
- salt
- freshly ground peppers
- Peppers
- 1 onion
- 1 red pepper
- 1 yellow pepper
- 1 clove garlic
- 3 tablespoons sesame oil
- 2 tablespoons soy sauce
- 4 tablespoons sweet Chili sauce
- 1 tablespoon Rice vinegar
- 1 tablespoon honey
- ⅔ cup vegetable stock
- salt
- freshly ground peppers
- cilantro (to garnish)
Preparation steps

Preheat the oven to 180°C | 350F | gas 4.

Step 1: Peel and finely chop the ginger and 1 clove of garlic. Wash, trim and finely chop the spring onion.

Step 2: Mix the mince with the eggs, breadcrumbs, spices, chopped spring onions, ginger and garlic.

Step 3: Season to taste with salt and pepper and shape the mixture into small balls.

Step 4: Place the meatballs on a baking tray lined with baking parchment and cook in the preheated oven for about 15 minutes, or until done.

Step 5: Trim, halve and core the peppers and cut into thin strips.

Step 6: Peel and halve the onion and slice lengthwise. Peel and slice the garlic.

Step 7: Heat the oil in a frying pan and add the garlic.
9.
Step 8: Quickly saute the peppers and onion. Season with salt, pepper and soy sauce.
10.
Step 9: Stir in the rice vinegar and stock and add the sweet chilli sauce and honey.
11.
Step 10: Transfer the vegetables to a warmed platter and arrange the meatballs on top. Serve garnished with fresh coriander.
