- 4 large Chicken legs
- 2 tsps paprika
- ½ Lime (juiced)
- 1 tsp cayenne pepper
- 1 tsp ground Cumin
- 1 tsp ground cilantro
- 1 clove garlic cloves (finely sliced)
- 3 Tbsps olive oil
- 2 scallions (green parts only, sliced)
Preparation steps

Preheat the oven to 400°F.

Score a line around each chicken leg 1" from the end of the bone to allow the meat to shrink away while cooking, and arrange bone-up in a foil-lined roasting tin.

Whisk the remaining ingredients together and coat the chicken thoroughly.

Roast for about 35 minutes until golden and cooked through. Wrap the end of the bones in foil to make the chicken less messy to pick up and eat by hand. Sprinkle with spring onion and serve immediately.
