- For the turkey
- 2 Turkey drumsticks
- For the marinade
- 4 crushed Juniper berries
- 1 tsp black peppercorns
- 2 sprigs rosemary
- 2 sprigs thyme
- 2 bay leaves
- 3 garlic cloves
- 2 Red chili peppers
- ⅛ l olive or Canola oil
- 2 slices lemons
- For cooking
- 2 Tbsps clarified butter
- ⅛ l white wine
- ⅛ l Broth

Preparation steps

Rinse turkey drumsticks and pat dry. Mix together marinade ingredients and pour over turkey. Lay lemon slices on drumsticks, cover and refrigerate 4 hours, turning frequently.

Heat clarified butter in a roasting pan. Remove turkey from marinade, season with salt and fry on all sides. Add wine and broth to pan and bake in an oven preheated to 175°C (approximately 350°F), occasionally basting meat with pan juices, about 1 hour.
