½ Vanilla bean
9 ozs Spelt flour (Type 630)
1 tsp Baking powder
4 ¼ ozs Raw cane sugar
½ organic lemon
1 pinch salt
1 ¾ ozs butter
2 eggs

Preparation steps

1.

Coarsely chop the macadamia nuts. Cut vanilla bean in half lengthwise and carefully scrape out the pulp with a knife.

Mix flour with baking powder, sugar, vanilla pulp, lemon zest and 1 pinch of salt. Mix in butter. Then add eggs and incorporate. Knead the nuts into the dough. Form 4 rolls of the same thickness, approx. 1.5 inches Ø, and chill for 30 minutes.

Place the rolls with sufficient spacing on a baking tray covered with baking paper and bake in a preheated oven at 200 °C / 400 °F for approx. 15 minutes.

Then allow to cool for approx. 10 minutes. Then cut into slices about 3/4 inches thick and bake the spelt cantuccini at 120 °C / 250 °F for 10-15 minutes until golden brown. Allow to cool completely.
