- 2 Tbsps Oil
- 1 large onion (finely chopped)
- ½ tsp Garam Masala (or to taste)
- 1 ⅔ cups Long grain rice
- 2 ½ cups fish stock
- 1 scallion (finely chopped)
- 2 cups smoked Haddock (roughly flaked)
- salt
- freshly ground Black pepper
- ¼ cup melted butter
- 2 hard-boiled eggs chopped (more if you wish)
- 4 Tbsps chopped parsley
- lemon juice
- Lemon wedge to garnish (optional)

To make a lower-calorie version of this dish reduce the number of eggs and the amount of butter used.
Preparation steps

Heat the oil and briefly sweat the onion and garam masala. Add the rice and sweat for a further minute, stirring well, so that the rice is coated in garam masala. Add the stock, bring to the boil and simmer, covered, for about 20 minutes until the rice has absorbed the liquid. Add the spring onions and the fish about 5 minutes before the end of cooking time. Season to taste with salt and pepper and more garam masala if you wish.

Before serving stir in the melted butter, parsley and chopped egg and heat over a medium heat for 1 - 2 minutes. Add lemon juice to taste. Spoon onto plates or into dishes and serve garnished with lemon wedges (optional).
