- 2 Tbsps Oil
- 1 small onion (chopped)
- ½ tsp Garam Masala
- 1 ⅔ cups Long grain rice
- 2 ½ cups Fish broth
- ½ bunch scallions (chopped)
- 2 cups smoked Haddock (in flakes)
- salt
- freshly ground Black pepper
- ¼ cup melted butter
- 2 hard-boiled eggs (chopped)
- 4 Tbsps fresh parsley (chopped)
- lemon juice
- Lemon wedge (to garnish)

Preparation steps

Fry the onion and the herbs in oil. Add the rice and continue to sautè for about 1 minute until the rice is coated with herbs. Pour in the fish broth, bring to the boil, cover and simmer for about 20 minutes until the rice has absorbed the liquid. Add the scallions and the fish about 5 minutes before the end of cooking time. Season with garam masala.

Before serving, stir in the runny butter, parsley and chopped egg and warm over a medium heat for 1 - 2 minutes. Season to taste with lemon juice, garnish with a few lemon wedges and serve.
