- 3 Tbsps Oil
- 2 onions (finely sliced)
- 2 cloves garlic cloves (chopped)
- 3 tsps Turmeric
- 2 Tbsps Curry paste
- 1 cup Basmati rice (washed)
- 2 cups vegetable stock (or water)
- 2 Sweet potato (peeled and roughly chopped)
- 1 small Cauliflower (broken into florets)
- 1 stick cinnamon
- 1 cup frozen peas
- ½ cup Golden raisins
- ⅔ cup sliced almonds

Preparation steps
1.
Heat the oil in a wide pan and cook the onions until lightly browned. Add the garlic, cook for 1 minute then add the turmeric and curry paste and cook for 2 more minutes.

Stir in the rice, cook for 2 minutes then pour over the stock. Bring to a boil then add the sweet potatoes, cauliflower and cinnamon stick.
3.
Cook for 5 minutes then add the peas and sultanas and continue cooking, stirring all the time, until the rice is tender and the stock has all been absorbed.
4.
Season with salt and pepper and serve with the almonds scattered over.
