1 bay leaf
1 tsp freshly chopped thyme
1 tsp chopped oregano
1 Tbsp Cajun seasoning
2 cups canned, chopped Tomatoes
16 ozs skinless, boneless Chicken thigh
1 ½ cups Smoked Sausage (sliced)
cup water
1 tsp salt
2 ¾ cups Long grain rice

Stovetop Cooking: Heat 1 tbsp oil in a heavy pan and fry the onion, garlic, and celery until the onion starts to color and soften. Add the chicken and sausage and fry until the chicken is browned. Add another tbsp oil to the pan. Add the rice, spices, and herbs, then stir well to ensure the rice is well coated. Add the tomatoes, 17 oz. water and the salt. Cover the pan and bring to a boil. Simmer gently for about 15-20 minutes, or until the rice is cooked. Stir once or twice during cooking. Serve as above.

1 Skillet, 1 Small bowl, 1 Measuring cups, 1 Cutting board, 1 Small knife, 1 Tablespoon, 1 Wooden spoon, 1 Slotted spatula, 1 Grill pan, 1 Salad spinner

Preparation steps

1.
Preheat the slow cooker if necessary – see manufacturer’s instructions.
2.
Mix the vegetables and seasonings with the tomatoes. Spread over the bottom of the slow cooker pot.
3.
Tuck the chicken thighs into the vegetable mixture. Top with the sliced sausage.
4.
Pour the water over and cover and cook on high for 4 hours.
5.
Remove the lid and stir in the rice and salt. Cover and cook for another 50-60 minutes, until the rice is cooked.
6.
Transfer to serving bowls. Tear the oregano leaves and scatter over the top of each bowl.
