- 2 ⅓ cups jersey royal potatoes (halved)
- 1 Red onion (sliced)
- ½ cup Feta (crumbled)
- 5 Radish (sliced)
- 1 Tbsp chopped oregano
- 1 Tbsp peppercorns (crushed)
- For the dressing
- 4 Tbsps olive oil
- 1 Tbsp Red wine vinegar
- 1 Tbsp Caper (chopped)
- 1 clove garlic cloves (crushed)
- salt
- freshly ground Black pepper
- To garnish
- mint

Preparation steps
1.
Cook the potatoes in salted boiling water for 15- 20 minutes until tender. Drain well and leave to cool.
2.
Gently mix the potatoes with the salad ingredients in a large bowl
3.
For the dressing: whisk all the ingredients until well blended. Pour over the salad and toss thoroughly.
4.
Put the salad on a serving plate and garnish with mint.
