1.333 cups all-purpose flour
½ cup cold butter (chopped)
¼ cup Sour cream
1 egg
olive oil (to grease the dish)
all-purpose flour (for the work surface)
cup Gorgonzola
cup cream cheese
2 cloves garlic cloves (crushed)
4 cups cherry Tomatoes (sliced)
2 Tbsps Dried rosemary

Preparation steps

1.
To make the pastry, knead the flour, butter, sour cream, egg and a pinch of salt into a smooth dough. Wrap in cling film and chilli in the fridge for around 30 minutes.

Preheat the oven to 200°C (180°C in a fan oven), 400°F, gas 6 and grease the tart dish with oil.

On a floured work surface, roll out the pastry slightly bigger than the dish and place it in the dish.

Mix together the Gorgonzola, cream cheese and the garlic. Season with salt and ground black pepper. Spread the mixture on the base and top with the sliced tomatoes. Bake for around 35 minutes.
5.
Sprinkle with the rosemary and, if desired, drizzle with a few drops of olive oil and serve sliced.
