1 sheet Puff pastry thawed (half of a 475 g | 17 oz package)
4 ripe Tomatoes (thinly sliced)
¼ cup olive oil
2 cloves garlic cloves (pressed)
salt
peppers
2 tsps dried Italian seasoning
fresh Sage (to garnish)

Preparation steps

Roll out pastry sheet on lightly floured surface to very thin 18 x 14-inch very thin rectangle. Using small plate as guide, cut out four 7-inch rounds. Transfer 2 rounds to each prepared sheet; cover and refrigerate at least 30 minutes. Reserve any pastry scraps to make decorative stems and leaves.

Position 1 rack in top third and 1 rack in bottom third of oven and preheat to 400°F / 200ºC.

Combine olive oil and minced garlic and lightly brush over the top of the pastry. Arrange sliced tomatoes to look like flowers. Create stems and leaves with the reserved pastry. Drizzle with remaining olive oil. Season with salt, pepper, and Italian seasoning.

Bake tarts until pastry is golden, about 15 minutes. Allow to cool. Garnish with fresh sage. Serve.
