- 1 packet ready-rolled Puff pastry (defrosted if frozen)
- 1 egg (beaten)
- 4 Tbsps Pesto
- 14 ozs Mozzarella (sliced)
- 5 medium Tomatoes (sliced)
- 1 ¾ ozs Parmesan (grated)
- Basil (to garnish)
Preparation steps
1.
Heat the oven to 200ºC (180º fan) 400ºF, gas mark 6.
2.
Lay the pastry onto a greased baking sheet and brush the beaten egg over the top of it. Bake in the oven for 20 - 25 minutes or until golden-brown.
3.
Slide the cooked pastry onto a serving board and let cool a little. Spread the pesto over the pastry and lay the mozzarella and tomato slices on top.
4.
Scatter over the grated parmesan and garnish with the basil leaves.
