4 cups green Asparagus (lower third of the spears peeled)
5 Tbsps olive oil
cup chicken stock
2 Tbsps lemon juice
4 Chicken breasts (approx. 120 g each, sliced)
2 Avocados (peeled and sliced)
0.333 cup Walnut (chopped)

Preparation steps

1.
Fry the asparagus in 2 tbsp hot oil. Season with salt and ground black pepper and stir in the stock. Cover and steam for 5 minutes. Remove from the heat, drizzle with the lemon juice and 2 tbsp oil and leave to cool.

Fry the chicken in the remaining oil until golden brown. Season with salt and ground black pepper.
3.
Arrange the avocado, chicken, asparagus and walnuts on plates. Drizzle with the asparagus liquid, season with ground black pepper and serve.
