Various vitamins of the B group are found in appreciable quantities in green beans. The proportion of riboflavin (B2), which plays an elementary role in glucose and fat metabolism, is particularly high.

Outside the grilling season, you do not have to give up the juicy steaks: Then simply prepare the meat in a grill pan.

Preparation steps

1.

Clean and wash beans and cook in boiling salted water for 8 minutes over medium heat. Rinse with cold water to stop the cooking, drain again and leave to dry.

2.

Peel and chop shallot and garlic. Wash tarragon, shake dry and chop. Heat 1 tablespoon oil in a frying pan. Sauté shallot and garlic in it for 3 minutes over medium heat.

3.

Add beans and honey and let caramelize for about 4 minutes while tossing. Season with salt, pepper and tarragon.

4.

While beans are caramelizing, rinse steaks, pat dry, salt and pepper. Grill on a hot grill on an oiled rack for 2-4 minutes on each side. Arrange steaks on plates along with tarragon beans.
