- For the sauce
- ⅜ cup vegetable stock
- 0.333 cup Crème fraiche
- 1 Tbsp butter
- 1 bunch parsley (finely chopped)
- 2 eggs (hard-boiled, chopped)
- 1 Tbsp Caper
- lemon juice
Preparation steps

Cook the asparagus in boiling, salted water for about 8 minutes until al dente. Remove from the water and drain well.

Put the vegetable stock, creme fraiche and butter in a pan and simmer over a medium heat until it achieves a slightly creamy consistency. Add the parsley, eggs and capers. Season with salt and ground black pepper. Add lemon juice to taste.

Brush the asparagus with oil and grill on all sides for 3–4 minutes. Season with ground black pepper and a little salt and serve on plates with the egg sauce.
