700 grams Halibut fillet
100 milliliters dry white wine
1 sprig rosemary
4 Tbsps olive oil
1 Tbsp Caper
4 Anchovy fillet (in oil)
2 sprigs Tarragon
Sea salt
freshly ground peppers
1 lemon

Preparation steps

1.

Preheat the convection oven to 180°C (approximately 350°F). Rinse the halibut, pat dry and cut into portions. Place in an ovenproof dish and pour in the white wine.

2.

Remove the rosemary leaves and finely chop. Mix with olive oil, capers, and chopped anchovy and spread over the fish.

3.

Cut the lemon into slices. Place the sprigs of tarragon over the fish, season with salt and pepper and cover with the lemon slices. Bake in preheated oven until golden brown, about 20 minutes. Remove and serve immediately.
